This would typically be perhaps doing some learning around the industry you wish to apply. Whether that be completing work experience in said area or completing extra learning that is relevant for your industry.
Also ensure you apply in a timely manner.
Between leaving school and joining EY I spent a couple of years doing an AAT apprenticeship, and would highly recommend trying to get some relevant experience during your gap year if possible. Whether a permanent role, volunteer, or even doing some kind of accounting for a friend or family member. Although our apprenticeship schemes require no experience, I think it's really helpful to try and develop a baseline understanding of the industry, which will help you emphasise to an interviewer what specifically interests you about the role. Not to mention knowing some Excel and basic accounting really helps you on the job.
More generally I think stepping out of your comfort zone every now and then is important. I think that assessment centres can be very daunting when you're straight out of school, as it's a completely new environment. Getting that bit of life experience made the process feel easier compared to applying to my original apprenticeship
