When do applications for the assurance apprenticeship close if I am intending to join for the class of 2021?

All our vacancies are open on a rolling basis, so they will only close when they are filled - I always suggest applying as soon as possible to avoid disappointment. :)

Is it too late to apply today?

Also, what grades are required? A levels- would ABB be acceptable?

Of course not, we have only recently opened for application and you're more than welcome to apply!

We do not have an academic requirement however, your offer will be under the condition that you achieve your predicted grades at A-Level at the point you are offered. :)
